My wife, Debbie, and I took over the Tower in 1998. I had previously been head chef
at Piermasters Restaurant in Plymouth, and before that pastry chef at the Horn of
Plenty at Gullworthy. Ruth Carter, who managed the dining room at Piermasters for
over a decade, is restaurant manager.
The philosophy of our ever-changing menu, follows the best seasonal ingredients mostly
sourced locally (see Suppliers), with a respect for the traditions of classical cuisine.
We value proper preparation, freshly-made stocks, sauces and pastries. Note we make
our own bread, pasta, chocolates and fudge.
